Ember Smoked Salmon with Citrus & Ember Butter

Serves: 4

Cookware: Enamel roasting pan / grill pan

Internal Temp Goal (Salmon):

✔ 125–130°F for medium (juicy, tender)

Ingredients

    •    4 salmon fillets (6 oz each)

    •    2 tbsp olive oil

    •    1.5 tsp The Ember seasoning

    •    1 tsp The House Blend

    •    ½ tsp Bull (pepper)

    •    ½ tsp Awe (heat)

    •    1 tsp Does Steak seasoning (garlic layer)

    •    Zest & juice of 1 lemon

    •    2 tbsp butter

    •    1 tbsp honey + Good Shit seasoning (sweet balance)

    •    Fresh dill or parsley (garnish)

Steps

1️⃣ Preheat oven 425°F or heat grill pan over med-high.

2️⃣ Pat salmon dry; brush lightly with olive oil.

3️⃣ Season evenly with:

• The Ember

• The House Blend

• Bull

• Awe

• Does Steak

4️⃣ Place salmon in enamel roasting pan (or grill pan skin-side down).

5️⃣ Roast or sear 8–12 min until internal temp hits 125–130°F.

6️⃣ While fish cooks, melt butter; whisk in lemon juice & zest, honey + Good Shit seasoning.

7️⃣ Remove salmon, plate immediately, and brush with Ember Butter.

Presentation

• Place salmon fillets on a Mackenzie-Childs platter

• Add lemon wheels + fresh herbs

• Serve on a Pampa Bay tray with colorful citrus accents

• Drop in a Nora Fleming mini (fish / sunshine / citrus theme)
