RECIPE 3 (APPETIZER)
SWEET HEAT STEAK BITES + WHIPPED COTTAGE CHEESE DIP

Serves: 6–8 as an appetizer
Cookware: Enamel skillet
INGREDIENTS (STEAK BITES)
1.5 lbs sirloin or filet tips, cut into bite-size cubes
1 tbsp olive oil
The House Blend seasoning
Does Steak seasoning (garlic layer)
Bull seasoning (pepper layer)
Awe seasoning (heat layer)
1 to 2 tsp honey
Good Shit seasoning (sweet finish)
INGREDIENTS (WHIPPED DIP)
1 cup cottage cheese
1/4 cup Greek yogurt
1 tbsp lemon juice
The House Blend seasoning
Does Steak seasoning
Bull seasoning (optional pinch)
INTERNAL TEMP GOALS (STEAK)
Medium-rare: 130–135°F
Medium: 140–145°F
STEP-BY-STEP (DIP FIRST)
1. Blend cottage cheese + Greek yogurt + lemon juice until smooth.
2. Season with:
– The House Blend
– Does Steak seasoning
– Optional tiny pinch of Bull
3. Spoon into a Pampa Bay bowl. Refrigerate while you cook steak.
STEP-BY-STEP (STEAK BITES)
4. Pat steak cubes dry (this is how you get that golden sear).
5. Toss steak with olive oil and season generously with:
– The House Blend
– Does Steak seasoning
– Bull
– Awe
6. Heat enamel skillet over medium-high until hot.
7. Sear steak bites in batches (do not crowd the pan).
Cook about 2 minutes per side for medium-rare, longer for medium.
8. When the steak is about 10°F below your target temp, drizzle lightly with honey and sprinkle a pinch of Good Shit seasoning. Toss quickly for 20–30 seconds.
9. Pull from heat at:
– 130–135°F for medium-rare
– 140–145°F for medium
10. Rest 3–5 minutes.
PRESENTATION (ELEVATED + FUN)
