Made in our favorite enamelware bundt pan, this cozy breakfast casserole is perfect for slow mornings, lake weekends, holiday gatherings, or feeding a house full of people.

Easy, hearty, and always one of the first dishes gone at Christian’s house.

Ingredients

- 1 pound ground breakfast sausage or bacon

- 6 large eggs

- 1/4 cup sliced green onions

- 2 cups shredded cheddar cheese

- 1 1/2 cups whole cottage cheese

- 1 1/4 cups shredded Swiss cheese

- Salt, black pepper, or seasoning salt — to taste

- 4 cups frozen hash brown potatoes, thawed

Instructions

1. Preheat oven to 350°F. Grease a 13×9-inch baking dish or enamelware bundt pan with nonstick spray or butter.

2. In a large skillet over medium heat, cook breakfast sausage or bacon until browned and fully cooked.

   - If using sausage, crumble while cooking.

   - If using bacon, crumble after cooking.

   Drain excess grease and set aside.

3. In a large bowl, whisk eggs until well blended.

4. Add green onions, cheddar cheese, cottage cheese, Swiss cheese, salt, pepper, and cooked breakfast meat. Mix until combined.

5. Fold in thawed hash brown potatoes.

6. Pour mixture into prepared dish and spread evenly.

7. Bake for 35–40 minutes, or until a knife inserted near the center comes out clean.

8. Let rest for 10 minutes before serving.
