#21 Christian's Pat-Down Rail Chicken Wings
A family favorite + Super Bowl Homecoming Recipe
Step One: Prep Like a Pro
Start with whole wings and cut each one into three pieces:
Drumette
Tip (discard or save for stock)
Now listen closely-this is the most important step:
Pat. Them. Dry. TWICE.
The dryer the wings, the crispier the skin.
Christian's wing Seasoning
For every dozen wings:
4 tablespoons Season & Shadow The House Blend
2 tablespoon The Good Shit
2 tablespoon All Shit
Salt & pepper to taste
Season Generously
Make-Ahead Friendly Tip
Once seasoned, you can layer the wings in a container using:
Parchment paper between layers
Paper towels on top to keep moisture out
How to Cook

-each holds 4-5 wings perfectly.
They fit right on your enamel sheet pan or go straight onto the grill.
Oven Method
Preheat oven to 450°F
Cook for 25 minutes
Flip wings
Return for another 15 minutes
Grill Method
Preheat grill to 375-400°F
Cook until golden and crisp
Flip Halfway through
Wing Rail Dipping Sauce
Ingredients
• ½ cup mayonnaise
• 1 cup ketchup
• 2 tablespoons Worcestershire sauce
• ½ teaspoon freshly ground black pepper (or to taste — the more black pepper, the better)
Instructions
1 In a medium bowl, combine the mayonnaise and ketchup until smooth.
2 Stir in the Worcestershire sauce.
3 Add black pepper to taste, adjusting for desired bold flavor.
4 Mix well and refrigerate for at least 30 minutes before serving for best flavor.
