RECIPE 1 (MAIN DISH)
JOYFUL CITRUS PEPPER PROTEIN CHICKEN

Serves: 4
Cookware: Enamel roasting pan or enamel skillet
INGREDIENTS
1.5 to 2 lbs chicken breasts OR boneless thighs
2 tbsp olive oil
The House Blend seasoning
Bull seasoning (pepper)
Awe seasoning (spice)
Does Steak seasoning (use as garlic powder)
1 tbsp honey
Juice of 1 orange (or 2 tbsp lemon juice)
Zest of 1 orange or lemon
Optional garnish: chopped parsley or basil
INTERNAL TEMP GOAL
Chicken (breast or thigh): 165°F
STEP-BY-STEP
1. Preheat oven to 425°F.
2. Pat chicken dry. Place in a bowl. Drizzle with olive oil.
3. Season the chicken generously with:
– The House Blend
– Does Steak seasoning (your garlic layer)
– Bull (pepper layer)
– Awe (heat layer)
4. Place chicken in your enamel roasting pan (or sear in enamel skillet first if you want extra color).
5. Roast 18–25 minutes depending on thickness (thighs usually cook faster and stay juicy).
6. While it roasts, mix your glaze:
– honey
– orange juice (or lemon)
– a small sprinkle of Good Shit seasoning (sweet balance)
7. When chicken reaches about 155°F, brush with glaze and return to oven 3–6 minutes.
8. Remove at 165°F internal temp. Rest 5 minutes.
9. Finish with citrus zest and herbs. Add an extra tiny pinch of Bull on top if you want that “pepper perfume” moment.
PRESENTATION (ELEVATED + 2026 TRENDY)
1. Slice chicken and fan it on a Mackenzie-Childs platter.
2. Set the platter on a Pampa Bay tray for a layered “tablescape” feel.
3. Add a Nora Fleming mini that fits the moment (bow, lemon, star, etc.).
SERVING IDEA
Serve with the high-protein whipped feta bean mash as a side OR as a base under the chicken.
